Turkey and Beef Meatballs

Ingredients

6 Roma tomatoes, chopped
3 Tbsp. olive oil
1 tsp granulated garlic
1 tsp granulated onion
1 tsp Spanish paprika
1/4 tsp black ground pepper
1/4 tsp sea salt
3/4 cups water

MEATBALLS
0.25 lbs. ground turkey
0.65 lbs. ground beef
1/2 small potato, shredded
quarter of a small onion, minced
2 garlic cloves, minced
1 tsp herbes de Provence
1 tsp dried parsley
1 tsp sea salt
1/4 tsp ground black pepper
1/4 tsp turmeric powder
1 egg

 

Sauce:

Heat the oil in a nonstick pan and add chopped tomatoes. Sauté on a medium high heat for 20 minutes. Add spices: granulated onion, granulated garlic, paprika, pepper, sea salt and mix. Add water stir well and cover. Cook the tomato sauce on low heat for 20 minutes.

 

Meatballs:

In a bowl, add the turkey, beef, potato, onion, garlic, parsley, herbes de Provence, sea salt, pepper, turmeric and the egg and blend the mixture well to make sure the meat is thoroughly seasoned. Using your hands, form 1 to 1 1/2 inch balls. Add to the sauce and cook for 30 minutes. Stir gently to prevent burning.

 

Tastes great served over steamed rice.
