Peri Peri Garbanzo Bean Salad

2 cups cooked garbanzo beans
1/2 red bell pepper, chopped finely
1/2 cup red onion, chopped finely
1/2 cup cilantro leaves, chopped finely
1 tsp Peri Peri Spice Blend
1/2 tsp ground black pepper
3/4 tsp sea salt
2 Tbsp. fresh lemon juice
1 Tbsp. olive oil
Feta cheese (optional)


Cooks Note: It is recommended to use fresh garbanzo beans but you can substitute with canned.


Instructions for cooking fresh garbanzo beans:

In a pressure cooker combine 2 cups of water and 1 cup dry garbanzo beans. Bring to a boil and reduce heat to low and then simmer for 3 hours. Beans should be very soft and slightly caramelized at the end of the cooking. Drain remaining liquid and set aside for later use.


In a medium size bowl combine all ingredients and mix well. Adjust seasoning to taste. You may finish the salad with crumbled Feta cheese. Serve as a side dish warm or cold.
