Arugula Dukka Salad

 

(serves 4-6)

 

Ingredients:

4 cups fresh arugula leaves
1 cup cherry tomatoes, halved
2 Tbsp. olive or grapeseed oil (optional)
1 tsp lemon juice (optional)
2 tbsp. Dukka mix
2 tbsp. feta cheese crumbled
salad dressing (your preference)
salt & pepper to taste

 

Place the arugula and chopped tomatoes and feta into a large salad bowl and lightly toss. Add the olive oil and lemon juice to the salad if you choose, season with salt and pepper and then lightly toss it again. Sprinkle the Dukka mix on top of the salad and voila! You have a healthy, light and very tasty side salad.
