1 Package of dried linguini 4 Tbsp Olive oil 2 Tbsp Minced garlic 3 lbs. Roma tomatoes, chopped 1 tsp Dried oregano 3 Tbsp Red wine vinegar 1 Tbsp Extra virgin olive oil Salt & Pepper to taste Grated Parmesan cheese
Mix olive oil, garlic, tomatoes, oregano, vinegar and salt and pepper. Let stand at room temperature for about 5 to 6 hours. Just before serving time, cook the linguini as directed on package. Thoroughly drain the water. Mix the pasta with the fresh tomato mixture. Add 1 tablespoon olive oil and toss well. Sprinkle over with Parmesan cheese.
Serve with garlic bread and a side of fresh, leafy salad.
