Ingredients
- 1 package dried linguini pasta
- 4 tablespoons olive oil
- 2 tablespoons minced garlic
- 3 pounds Roma tomatoes, chopped
- 1 teaspoon dried Oregano
- 3 tablespoons red wine vinegar
- 1 tablespoon extra virgin olive oil
- Salt, to taste
- Black pepper, to taste
- Grated Parmesan cheese, for serving
Instructions
- In a large bowl, combine the olive oil, garlic, chopped tomatoes, oregano, red wine vinegar, salt, and black pepper.
- Cover and let the mixture stand at room temperature for 5 to 6 hours to allow the flavors to blend.
- Just before serving, cook the linguini according to the package directions until al dente.
- Drain the pasta thoroughly and transfer it to a large serving bowl.
- Add the fresh tomato mixture and toss until the pasta is evenly coated.
- Drizzle with the extra virgin olive oil and toss again.
- Sprinkle generously with grated Parmesan cheese and serve immediately.
Tips
- For the best flavor, use ripe, in-season Roma tomatoes.
- Fresh basil makes a delicious addition to the tomato mixture.
