Line a sheet tray with parchment. Peel yams and cut into long chunky pieces. In a large bowl coat the yams with oil. Sprinkle salt and pepper. Spread yams in single layer on prepared baking sheet making sure not to overcrowd. Bake until sweet potatoes are tender and golden brown, turning occasionally (about 20 minutes). Let cool 5 to 10 minutes before serving.
This is a perfect side dish to serve along with a fresh salad.
