- 1 tbsp plantain banana, chopped
- 1 tbsp green tomatillo, chopped
- 1 cup Mexican Mole spice mixture
- 1 tbsp white wine
- 1/4 tsp salt
- 3/4 cup water (divided)

Sauté Ingredients:
- Heat vegetable oil in a nonstick pan over medium-high heat.
- Add the finely chopped onion, plantain banana, and green tomatillo.
- Sauté for about 10 minutes until softened and fragrant.

Add Mole Mix:
- Stir in 1 cup of Mexican Mole spice mixture.

Simmer the Sauce:
- Lower the heat and add white wine, salt, and 1/2 cup of water.
- Cover the pan and let it cook for 15 minutes, stirring occasionally.

Blend to Perfection:
- Transfer the mixture to a blender.
- Add an additional 1/4 cup water and blend until smooth and creamy.

- Use the sauce to enhance your favorite roasted meats, such as chicken, pork, or beef.
