Creamy Mexican Mole Sauce

Ingredients:

  • 1/4 cup vegetable oil
  • 1/3 onion, finely chopped
  • 1 tbsp plantain banana, chopped
  • 1 tbsp green tomatillo, chopped
  • 1 cup Mexican Mole spice mixture
  • 1 tbsp white wine
  • 1/4 tsp salt
  • 3/4 cup water (divided)

Instructions:

  1. Sauté Ingredients:

    • Heat vegetable oil in a nonstick pan over medium-high heat.
    • Add the finely chopped onion, plantain banana, and green tomatillo.
    • Sauté for about 10 minutes until softened and fragrant.
  2. Add Mole Mix:

    • Stir in 1 cup of Mexican Mole spice mixture.
  3. Simmer the Sauce:

    • Lower the heat and add white wine, salt, and 1/2 cup of water.
    • Cover the pan and let it cook for 15 minutes, stirring occasionally.
  4. Blend to Perfection:

    • Transfer the mixture to a blender.
    • Add an additional 1/4 cup water and blend until smooth and creamy.
  5. Serve:

    • Use the sauce to enhance your favorite roasted meats, such as chicken, pork, or beef.
