Ingredients

Instructions

  1. Heat the vegetable oil in a large, deep skillet over medium heat.
  2. Add the chopped onion and sauté for about 4 minutes, or until lightly browned.
  3. Add the garlic and ginger. Cook for an additional 4 minutes, stirring frequently.
  4. Stir in the Ethiopian Berber Spice, California Chili Powder, salt, cayenne pepper (if using), and black pepper. Cook for 2 minutes, stirring constantly to toast the spices.
  5. Add the chopped tomatoes and stir to combine.
  6. Cover the skillet, reduce the heat to low, and simmer for 30 minutes. Stir occasionally to prevent the sauce from sticking or burning.
  7. Once the sauce has thickened and the tomatoes have broken down, stir in the fresh cilantro.
  8. Serve warm over rice, with flatbread, or as a flavorful base for your favorite protein, vegetables, legumes, or eggs.
