
Ethiopian Berber Spicy Sauce!

Ingredients
- 5 tablespoons vegetable oil
- 1 large onion, finely chopped
- 2 tablespoons fresh ginger, finely chopped
- 10 cloves garlic, finely chopped
- 2 tablespoons Ethiopian Berber Spice
- 2 tablespoons California Paprika
- 1 teaspoon salt
- ½ teaspoon Cayenne Chili Powder (optional)
- ¼ teaspoon Ground Pepper Black
- 3 medium tomatoes, chopped
- ½ bunch fresh cilantro, finely chopped
Instructions
- Heat the vegetable oil in a large, deep skillet over medium heat.
- Add the chopped onion and sauté for about 4 minutes, or until lightly browned.
- Add the garlic and ginger. Cook for an additional 4 minutes, stirring frequently.
- Stir in the Ethiopian Berber Spice, California Chili Powder, salt, cayenne pepper (if using), and black pepper. Cook for 2 minutes, stirring constantly to toast the spices.
- Add the chopped tomatoes and stir to combine.
- Cover the skillet, reduce the heat to low, and simmer for 30 minutes. Stir occasionally to prevent the sauce from sticking or burning.
- Once the sauce has thickened and the tomatoes have broken down, stir in the fresh cilantro.
- Serve warm over rice, with flatbread, or as a flavorful base for your favorite protein, vegetables, legumes, or eggs.
