Description: Smoked jalapeño peppers are known as chipotle chilies or simply chipotles, from a word in the Nahuatl language of Mexico’s Aztec people. They are a bit above medium-hot — about 6.5 on a scale of 1 to 10 — with a pronounced smoky flavor. Chipotle flakes add authentic flavor to enchilada sauces, chili, stews, barbecue rubs and cornbread. Their smoky quality combines well with poultry, meats and winter squash.
