Herbs De Provence Roasted Chicken & Potatoes

4 chicken thighs (3 lbs.)

8 small French fingerling potatoes

3 lemon slices

2 garlic cloves

3 Tbsp. olive oil



2 tsp. Herbs de Provence sea salted garlic

1 tsp. granulated onion

¼ tsp. ground black pepper

¼ tsp. ground turmeric



Preheat oven to 425° degrees.

Rinse and clean the chicken and pat dry with a paper towel.

Place the chicken, potatoes, lemon, and garlic in a medium size bowl. Season the chicken generously with spices; Herbs de Provence salt, garlic, onion, black pepper and a touch of turmeric. Drizzle generously with olive oil and use your hands to rub the meat.

Transfer the seasoned chicken to a roasting pan and cover well. Roast the chicken in the oven for an hour. Thirty minutes into roasting, remove the cover. Grill the chicken for the last 15 minutes.
