Mustard

Like salt, pepper and garlic, mustard is a basic spice that enhances a wide variety of flavors. Depending on how you mix it, mustard can be mild and subtle, hot and forceful or one of many flavors in a complex blend. These tiny seeds come in yellow, brown and black and can be used whole, cracked or ground. Whole yellow mustard seeds adds fresh, zesty heat to sauces, salad dressings, dips, sandwich spreads, soups and stews and meat rubs. Brown mustard seed is the type found in prepared Dijon-style and grainy types of mustards. Black mustard seeds are the strongest in flavor.
