Basic Agar Pudding Mix

 

Making desserts with agar agar is ridiculously easy, particularly when using the powdered variety.

 

With adult supervision around the stove, even children can turn out their own jiggly treats.

 

(Yields about 1 cup)
1 cup liquid, such as almond milk, coconut milk or juice
1 tsp. agar agar powder
1/4 to 1/3 cup sugar or other sweetener such as stevia, to taste
Flavorings, to taste

 

In a saucepan, mix agar agar with liquid and allow to stand at room temperature for about 5 minutes. Slowly bring to a boil and remove from heat.

 

Add sweetener and other flavorings and mix well. Pour into molds or a clean, shallow, straight-sided pan (do not use cling wrap before agar has gelled).

 

Allow to cool. If prepared in a pan, use cookie cutters to cut out shapes.

 

Serve with vegan whipped cream.
