Lavender

Description: Originating in the western Mediterranean, lavender is a highly aromatic plant with a sweetly floral and spicy aroma carrying notes of lemon and mint. Versatile lavender must be used in small quantities because its flavor quickly becomes overbearing. Used sparingly, lavender flowers enhance the flavors of beef, lamb and goat as well as sweets like ice cream. Other food affinities include apple jelly, butter, cream, custard, dark chocolate, hibiscus, honey, sugar, tea, pepper and vinegar.
