Description: An aromatic dried herb that grows wild throughout Mexico and the southwestern U.S., epazote has a highly camphoric piney-balmy odor reminiscent of a tropical rain forest. It is known as one of the most effective neutralizers of stomach gas produced by beans. Epazote leaves are very popular in herbal tea infusions, and can be used in flavoring meats, beans, and peas. It is best to cook the leaves into a dish instead of using them as a garnish.
