3 Tbsp. olive oil
2 cloves of garlic minced
5 large Roma tomatoes, chopped
2 Tbsp. tomato paste
1/2 tsp harissa spice
1/4 tsp ground cumin
1/2 tsp salt
1 tsp granulated garlic
1 tsp granulated onion
1 tsp spanish paprika
1 lb. ground beef
1 egg
1 quarter potato, shredded
2 Tbsp. bread crumbs
2 Tbsp. olive oil
1 tsp granulated garlic & granulated onion
1 tsp Spanish paprika & harissa spice
1/4 tsp salt & pepper
Preparing the Sauce:
In a nonstick pan heat up olive oil. Add garlic and chopped tomatoes and cook uncovered on a medium-high heat for about 20 minutes until tomatoes soften . Add tomato paste and mix. Add spices of harissa, cumin, garlic, onion, salt & pepper mix well. Lower the heat and cover the pan cook the tomato sauce for another 20 minutes.
In the meantime prepare the meatballs:
In a large bowl combine everything by hand until well mixed. Firmly form 2meatballs by hand. Heat 2 tablespoons of olive oil in a skillet on medium-high heat. Brown meatballs and place in the sauce pan. Cook on low heat for about 25 minutes.
Putting it all together:
Boil a 1 lb. box of spaghetti until al dente. Drain the water and plate it. Spread over the top with a few spoonful's of meatballs and sauce. Top it off with a couple of tablespoons of parsley.
