This is an English mixture of whole spices, used for chutneys, pickled fruits and vegetables, and to spice vinegar. Pickling spice not only adds characteristic flavor to pickles, it adds complex flavor to braised meats, stews, beans, rice dishes, and more.

Pickled Vegetables

Ingredients:

7 small cauliflower florets

2 carrot sticks

2 whole jalapeño peppers

15 slices Daikon radish (about ½ root)

3 cloves garlic, cut in half

1/3 cup apple cider vinegar

1 cup golden balsamic vinegar

1 cup water

Juice of two fresh lemons

2 tablespoons pickling spice

2 ½ tablespoons kosher salt

½ teaspoon sugar

1/8 teaspoon black pepper, ground


In hot sterilized pickle jars or other vacuum seal jars wedge in vegetables: cauliflower, carrot, jalapeno pepper (don’t cut the pepper), Daikon radish, and garlic cloves.

Bring to boil the following ingredients: apple cider vinegar, golden balsamic vinegar, water, and lemon juice. Mix in the spices: pickling spice, salt, sugar, and black pepper and let simmer for 3 minutes.

Add boiling liquid into the vegetable jar cover and in two weeks you will have delicious pickles.
