California chiles are also known as Anaheim chiles, or New Mexico chiles. They got the name "Anaheim" when a farmer brought these seeds to the Anaheim, California area in the early 1900s. These are mild chiles which can be added to casseroles, stews, soups, and sauces. The chile "heat" of Anaheims are mild and typically ranges from 500 to 2,500 on the Scoville scale.

Chilies & Tomatoes Pasta Sauce

5 tablespoons olive oil
1 onion, chopped fine
6 cloves garlic, chopped fine
2 large fresh tomatoes, chopped
2 Chili Chipotle pods
2 Chili New Mexico pods
2 Chili California pods
¼ cup of water
1 tablespoon tomato paste
1 teaspoon paprika
¼ teaspoon black pepper ground
½ teaspoon salt
¼ teaspoon oregano
½ teaspoon basil
1 teaspoon dark chili powder
1 teaspoon sugar
¾ cup shredded parmesan cheese
Cooks note: dried peppers, which contain the essence of the fresh without the substance, must be reconstituted in some way before they are consumed. There are several ways to do this. One is to soak whole dried peppers in hot water for about 20 minutes. Discard the seeds and proceed with the recipe.
Transfer chilies, parmesan cheese and water into food processor and puree until smooth. Set aside.
Heat olive oil in a medium size skillet over medium heat. Add onion and sauté until golden brown about 8 minutes. Add garlic and sauté for 3 minutes, then add tomatoes and tomato paste; mix well. Cook tomatoes for about 10 minutes until softened. Next, add spices: paprika, black pepper, salt, oregano, basil, dark chili, and sugar. Mix the chili parmesan puree into the sauce. Cover; adjust the heat to low and simmer for about 15 minutes until the sauce thickens slightly and the flavors blend.
